Quinoa Salad with Avocado Dressing Recipe

Ingredients for Quinoa Salad
- 130g quinoa
- 100g cherry tomatoes, sliced
- 100g baby cucumber, diced
- 40g red onion, finely chopped
- 60g yellow capsicum, diced
- 50g black olives, pitted and sliced
- 1 handful baby spinach, roughly chopped
- 100g feta cheese, crumbled
- 1 tbsp fresh dill, chopped
- 1 tbsp Thuringia Estate Cold Pressed Avocado Oil Avocado Oil
- 2 tbsp fresh lemon juice
- salt and pepper
Ingredients for Avocado Dressing
- 150g avocado, diced
- 1 small clove garlic, finely chopped
- 2 tbsp lemon juice
- salt
- 1 tbsp Thuringia Estate Cold Pressed Avocado Oil
- 90ml filtered water
Method
Boil the quinoa until tender, then drain and cool.
In the meantime, make the avocado dressing by tipping all the dressing ingredients into a small food processor (eg NutriBullet) and blitz until smooth and creamy. Cover and put in the fridge for the garlic to marinate for 20 minutes.
Next make the salad by putting quinoa, tomato, cucumber, red onion, capsicum, olives, spinach, feta and dill into a large bowl. Toss gently. Add in avocado oil, lemon juice, salt and pepper then toss gently again.
Serving Suggestion
Serve quinoa salad with dollops of avocado dressing.
